Our Philosophy
At Ember & Oak, every dish begins long before it reaches the kitchen. It begins in the soil of local farms, in the orchards that line the river valley, and in the heritage breeds raised by families we know by name.
Our open-hearth kitchen is the soul of the restaurant. Here, ingredients are transformed over wood and flame, drawing out flavors that no modern oven can replicate. We cook the way our ancestors did, with patience, intuition, and a deep respect for the craft.
The result is a menu that changes with the calendar, honoring what the land offers each week rather than forcing the land to bend to us.
The Chef
Executive Chef Marcus Calloway spent over a decade honing his craft across three continents before returning to his roots in the American countryside. Trained at Le Cordon Bleu in Paris and tempered by years in the open-fire kitchens of Argentina and South Africa, Marcus brings a worldly perspective to hyper-local ingredients.
